I would say go with the S60, I have driven that exact model car as a loaner and thought it was a great car. The S80 with a 3.2 on the other hand is a dog in my opinion. The car weighs too much for the engine, we test drove the XC70 and S80 with a 3.2 and it just had no power. Bought the XC70 because you can get a T6 in it.
