I would suggest a small shield or the cestus in the left hand so you can parry with L2 while still having your weapon in the right hand to attack. Also, the dogs can't be parried, only 'weapon attacks' can, and not all of them. For example, most sword attacks can be parried, except for some of the charged ones and jumping attacks.

The only tip I can really give is go for the head. Run away from his AOE attack that he spams, then run in after a second (there’s a space you can run through) and punish the head. They also don't scale with Fth/Int so you don't miss out by not having tons of levels in their stat. They'll add a respectable amount of damage.
