You need to wait, the rotten food takes time to "dissapear", then with an empty sack you could gather the fertilizer. I Think you need worms.

It takes a few weeks and you need something silly like 10 or 20 pounds of eligible food to compost before it'll turn and you can remove it. Also, to my knowledge fruits and veggies (and maybe mushrooms) can compost. Meats and processed foods will just sit in there rotting forever.
