I had one month to study for the MCAT from the last day of exams on 12/12/2023 to my test day on 01/13/2023. My strategy: I personally think that it is extremely important to have a strong overall background in context before starting to do practice questions. For content review, I used the kaplan books and anki (anking deck) to study.

Taking the test in April and having a score release in May ensures that you are still able to submit during that ideal time. Still pretty risky if you have no idea what you'll get. MCAT scores take a month to come out, you prob won't know your score until you're 3/4 of the way done with your applications.
I took the mcat before taking orgo. Looking back, if I had taken orgo before studying it probably would have saved me about a week of studying. Definitely not worth taking a whole course just to save a week. I did well in C/P too (130).
